I've tried this recipe once before and swear by it! Very easy to make especially for beginners.
Ingredients...
1/3 Cup - melted coconut, vegetable, or extra virgin olive oil
1/2 Cup - honey or maple syrup
2 Eggs
1 Cup - mashed ripened bananas (2 full ones)
1/4 Cup - milk or water
1 Teaspoon - basking SODA - NOT powder! (There is a difference!)
1 Teaspoon - vanilla extract
1/2 Teaspoon - salt
1/2 Teaspoon - cinnamon, plus some to sprinkle on top
1 3/4 Cups - of flour
OPTIONAL - 1/2 Cup - mix-ins; chopped walnuts or pecans, chocolate chips, raisins, chopped and dried fruit, or full banana slices
Prep Time: 10 Minutes
Cook Time: 55-60 Minutes
Makes 1 Loaf (10 slices)
Instructions...
Preheat oven to 325 degrees and grease 9x5" pan
In large bowl, beat oil and honey together with a whisk. Add eggs and beat well, then whisk in mashed bananas and milk
Add the baking soda, vanilla, salt, and cinnamon and whisk together. Lastly, switch to a big spoon and stir in the flour, just until combined. Some lumps are ok. If you're adding mix-ins, add NOW!
Pour batter into greased pan and sprinkle lightly with cinnamon
Bake for 55 - 60 minutes, depending on if you add the mix-ins or not. Let the bread cool in the loaf pan for 10 minutes, then transfer to wire rack to cool for 20 minutes before slicing
